Recipe for Broccoli Cheese Soup

A diet friendly version of Broccoli Cheese Soup can be made by using the following ingredients:

1/2 cup of cooked, drained broccoli
2 slices of cheese (70 calories or less each)
1 cup of skimmed milk (80 calories)

Simply melt ingredients in microwave, stirring every 15-30 seconds until smooth.  Add salt and pepper if desired. Entire recipe is just shy of 250 calories.

Broccoli is a good source for dietary fiber, a restorer of folate, and may contain Health Powers that work to lower cholesterol, aid in digestion and regulate diabetes. Broccoli is also a fantastic diet aid that is low in calories and contains only a trace of fat.

When purchasing, look for full, green specimens supporting firm trees. Avoid broccoli that contains yellow, as this generally means that the broccoli was picked past peak and was fixing to go into 'flowering mode'.  Once home from the market, broccoli should be stored in a cool place to prevent a yellowing in color - this time related to wilting.
